I tried following that, but I'm not getting the output I'm looking for. Maybe I'm doing something wrong.

When I use number of lights, my character is flat red and my set yellow. That's not terribly helpful.

The only edge mode I see is edge length. That gives me a narrow green/blue gradient on my geo. While this is closer to what I'm looking for, I was hoping for a larger range of color, like in the Buddha image in the link you provided.

Any ideas what I'm missing?

You could fake it using a Facing Ratio shader.
