BUT the Arnold ROP has the option in the baking tab, so I have a glimmer of hope.
While baking to a normal uv set works just fine, I haven't been able to get udims to work.
If it is supported, what is the udim syntax for the file path in the output tab? I've tried <udim>, <UDIM>, and %(UDIM)d, to no avail.

This is supported on the Arnold ROP under the Properties | Baking Tab, you can either specify the udim tile you want to bake e.g.
0:0 2:0 0:1 1:1 2:1 3:1 0:2 1:2
or
1002 1004 1023 1024
Alternatively you can click All and it will bake them all out.

I have specified the udims I want in the baking tab. Do I need to also put a “udim” variable in the file path name like in my post? Or does arnold just append the udim number to the file name in some way?
Confirming that this works great, and that the current udim number is appended before the file extension (i.e. "texture.1001.exr"). I believe I had an invalid udim value which was breaking it previously.
