I want to get a black and white (grayscale) image inside arnold. Is there a filter in the camera settings or something similar?

What'd be the purpose of this? If it's just for checking your values whilst doing lighting, you can switch to luminance in the arnold renderview. If you want to preview something more complex, you could use: http://sosoyan.github.io/Aton/

This is a display driver for arnold that will stream the render to nuke, where you can do all kinds of cool interactive pixel processing with it.
